PROCESS

After selective picking and an initial sorting by hand, the whole cherries of this Geisha coffee variety underwent a fermentation stage in the absence of oxygen, before being pulped. A second stage of fermentation in sealed barrels was then carried out, with inoculation of lactic bacteria from the fermentation of a previously treated batch.

Drying: 15 days in a parabolic dryer, then stabilisation for 3 months in a temperature-controlled chamber.

For the past four years, Aroma Nativo has been a bridge between undiscovered Colombian coffee farmers and celebrated roasters worldwide. In 2022, Luis Marcelino, the visionary behind Aroma Nativo, took this commitment to the next level with the launch of the Veci Project. This collaborative endeavour pairs skilled coffee producers who, despite excellent farming techniques, face limitations in processing their beans due to inadequate infrastructure and limited space on their farms. Aroma Nativo contributes by providing essential knowledge and access to state-of-the-art processing facilities located in the southern regions of Huila and Quindio.
